My boyfriend loves meat. So I made this for him. It's a bit of a faff, but well worth it. It made a super cold meat loaf sandwich the next day.
Ingredients
500g minced beef
200g minced pork
2 onions (finely chopped)
2 garlic cloves (crushed)
1 large carrot (grated)
2 tsp dried thyme
1 egg
250g fresh breadcrumbs
50ml milk
2 tbsp worcestershire sauce
2 tsp english mustard
salt and pepper
Preheat the oven to 160°C. Grease a 2lb loaf tin.
Mix the mince, onions, garlic, carrot, thyme, egg, worcestershire sauce, mustard, salt and pepper together in a bowl. Get your hands in. In a separate bowl, mix the breadcrumbs with the milk to soften them, then add this to the mince mixture. Squelch it about with clean hands to blend. Fill the loaf tin with the mixture and cover with foil.
Place the loaf in a roasting tin, and pour in boiling water to come a third of the way up the loaf tin's sides. Bake for 1½ hours until cooked through.
